Dried Wild Mushrooms from Sweden

We sell top quality dried wild mushrooms that are hand picked by us, or other carefully selected pickers, in West Sweden. Handled with care from start to finish, so that only the finest reach your table, we choose the best specimens of the varieties we pick and clean them in the forest to ensure that they are not gritty. On the day the mushrooms are picked we sort through them to remove pine needles and leaves then slice (if applicable) and dry quickly to ensure that the maximum taste is conserved. Drying enhances the flavour of the varieties we pick and gives a long shelf life so there is no waste – rehydrate only what you need and keep the rest in an airtight container for another occasion. There is no sand or grit in our mushrooms so they don’t need to be rinsed before being used.

Rehydrating dried mushrooms

As the flavour of mushrooms is concentrated by drying a little goes a long way. Rehydrate by putting in a bowl with just enough hot (but not boiling) water to cover for about 20-30 minutes, then use as you would any fresh mushroom. The flavourful soaking water from all the varieties can be used as stock but we recommend that you taste the liquid from Winter Chanterelle and Horn of Plenty before using, to check that the more pungent aroma of these mushrooms isn’t going to overwhelm the flavour of the dish you are making.
